Brownie Fudge Pudding

Our mom always made this brownie fudge pudding recipe that came from our grandma’s kitchen. This rich, brownie fudge pudding is a chocolate lover’s dream. The batter is similar to brownie batter, but it is baked in a water bath to create a fudgy, pudding-like consistency. It is somewhere between a brownie and brownie batter and best served warm with ice cream on top. It is chocolatey, rich, and insanely delicious.

Ingredients

  • 4 large eggs
  • 2 cups granulated sugar 400 g
  • ½ cup all purpose flour 60 g
  • ½ cup cocoa powder 55 g
  • 1 cup melted salted butter 226 g
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt

Instructions

  • Preheat the oven to 300 degree fahrenheit
  • In a large mixing bowl with electric beaters, mix together the eggs and sugar until light and fluffy. The mixture should form a ribbon when it falls on itself when pulling up the beaters. This should take about 5 minutes.

  • After the eggs and sugars are well combined, add in the flour and cocoa powder and mix on low until just combined.
  • After adding the flour and cocoa, pour in the melted butter, vanilla, and salt. Mix on low until just combined. Set the batter aside.
  • Prepare the water bath by getting a large dish (e.g., 9×13”) that an 8×8” dish fits inside of.

  • Spray the 8×8” pan with cooking spray. Place the greased pan inside the larger pan. Add warm water (just under boiling) to the large pan until it reaches halfway up the 8×8” pan.
  • Bake on the lowest level for about one hour and 15 minutes. Do not over-bake (this should be gooey in the center still)
