In a large mixing bowl with electric beaters, mix together the eggs and sugar until light and fluffy. The mixture should form a ribbon when it falls on itself when pulling up the beaters. This should take about 5 minutes.
After the eggs and sugars are well combined, add in the flour and cocoa powder and mix on low until just combined.
After adding the flour and cocoa, pour in the melted butter, vanilla, and salt. Mix on low until just combined. Set the batter aside.
Prepare the water bath by getting a large dish (e.g., 9x13”) that an 8x8” dish fits inside of.
Spray the 8x8” pan with cooking spray. Place the greased pan inside the larger pan. Add warm water (just under boiling) to the large pan until it reaches halfway up the 8x8” pan.
Bake on the lowest level for about one hour and 15 minutes. Do not over-bake (this should be gooey in the center still)
