- Sugar: The sweet foundation of this cake and so many others.
- Cinnamon, Cardamom, Ginger: There can’t be too many spices in our book, and we use a trio of cinnamon, cardamom, and ginger for warm spice in every bite.
- Butter: The better in this recipe is melted and mixed into a cake. Although the method is similar to oil, the butter imparts richness and a comforting, buttery flavor.
- Flour: Provides structure and stability to the cake. We use all purpose flour.

- 4 cups apple ~4 large apples peeled cored, and diced into ½” cubes (don’t use too sweet of an apple—we love pink crisps or gravensteins)
- 2 eggs beaten
- 1 teaspoon vanilla
- 1 ¼ cup sugar 250 g
- 2 teaspoons cinnamon
- 1 teaspoon cardamom
- ½ teaspoon ginger
- ½ cup butter melted 113 g
- 2 cups flour 240 g
- 1 teaspoon salt
- 1 teaspoon baking soda
Crumble:
- 1 ½ cup all-purpose flour 180 grams
- 1/2 cup firmly packed light brown sugar 100 grams
- 1/4 cup white sugar 50 grams
- 1/2 teaspoon salt 3 grams
- 1 stick butter 113 grams
- 1/2 teaspoon almond extract
Instructions
Brown sugar crumb:
- Add the flour, brown sugar, sugar, and salt to a medium bowl. Stir to combine
- Pour in the melted butter and almond extract. Mix together until large crumbs form. Set aside
Apple cake:
- Preheat oven to 350
- In a large bowl, add diced apples, vanilla and eggs. Stir until combined
- Add sugar, cinnamon,ginger, cardamon and butter. Stir until combined
- Add flour, salt, and baking soda. Stir again until combined
- Grease a 9 inch cake pan and pour in the batter. Spread the batter in an even layer with a spatula.
- Top with the cake batter with the prepared crumble.
- Bake for 60-80 minutes or until a toothpick comes out clean. (this will vary by oven so check it with a toothpick starting at around 55 minutes)
