Add all ingredients into a cocktail shaker. Shake vigorously and strain into a chilled cocktail glass. Top with salt foam
Salt Foam:
Add the water and Sucro in a small pan over low heat. Whisk to integrate the sucro into the water and continue to whisk until the mixture reaches 160 degrees. Remove from heat (the mixture should be hot but not boiling)
To cool down the liquid, place the pan over an ice bath and stir. Once it is cooled, remove the pan from the ice bath, add the lime juice and salt and stir.
Use an immersion blender to blend the mixture to form a foamy air. Once the entire mixture is foamy, scoop on top of the margaritas.
