Green beans with garlic bread crumbs

Servings 6

Ingredients

  • 1 pound haricots verts green beans trimmed
  • 1 tablespoon butter
  • 1 clove garlic
  • ½ cup bread crumbs
  • 4 tablespoons oil
  • 1 shallot sliced into thin rings
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • ½ cup parmesan grated
  • Zest 1 lemon
  • 1 tablespoon parsley chopped

Instructions

Green beans

  • Fill a large pot with water and bring to a boil on high heatIn a separate bowl, while waiting for the water to boil, create an ice bath to cool down the green beans. Add 2 cups or so of ice and water. Set aside
  • Once boiling, add green beans
  • Cook for 3-4 minutes (longer if bigger beans) until they are bright green in color
  • Remove from hot water and strain
  • Dunk green beans into ice bath immediately

Fried Shallots

  • On medium high heat, add 4 tablespoons oil into a small frying pan
  • Slice a shallot into thin rings
  • Once the oil has heated for around 3 minutes, add in the shallot
  • Cook shallot until lightly golden
  • Have a strainer and measuring cup ready to separate the fried shallots while reserving the oil
  • Once golden, strain shallots from the oil
  • Place the fried shallots on a paper towel and sprinkle with a pinch of salt
  • Reserve the oil for heating green beans

Garlic Toasted Bread Crumbs

  • On medium heat, add butter into a small saucepan
  • Grate garlic into the butter with a microplane
  • Stir until fragrant, ~1 minutes
  • Add breadcrumbs to the garlic butter and toast until golden, ~2 minutes. Remove from heat and set aside

Heating the Beans

  • On medium heat, add the reserved shallot oil to a saucepan
  • Once warm, place dry, cooked green beans in the oil
  • Top with salt, pepper, and lemon zest until heated through
  • Once heated, add green beans to a plate. Remove them with tongs or a fork as you won’t need all the oil to serve

Assembly

  • Top with parmesan, bread crumbs, fried shallots, and parsley. Serve
