Chicken Souvlaki

Ingredients

  • 4 chicken breasts cubbed
  • 1 cup greek yogurt
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon coriander
  • ½ teaspoon pepper
  • 1 peppers cut into 1” cubes
  • 1 red onion cut into 1” cubes

Instructions

  • Cut chicken breasts into 1” cubes
  • Place yogurt, olive oil, lemon juice, garlic, and spices into a plastic bag and evenly combine. Add in chicken cubes and coat to combine. Let marinade for 4-24 hours
  • Turn barbecue onto medium high heat
  • Place 1 piece of marinated chicken alternating with a piece of pepper or onion onto skewers
  • Cook on the barbecue until internal temperature reaches 165 degree F, flipping 1 time halfway
  • Let the chicken rest for 10 minutes before serving
