Guacamole

This guacamole is our absolute favorite. It is creamy and full of flavors that highlight the avocado. The acidity of the lime pairs with the heat from the jalapeno and creaminess of the avocado. All the ingredients come together for the perfect bowl of guacamole everytime. From chips to salads and all things in between, a little bit of this guacamole makes most anything better. 

We learned the secret ingredient in this guacamole from Nopalito – a tomatillo. These little green husk tomatoes can be found in most grocery stores in the produce section next to the peppers. They add acidity and brightness to the dish without being overly sour. To use them here, simply husk and wash the tomatillo. Once cleaned, mince it into small pieces and stir it into the guacamole. If you do not have this on hand, the guacamole will still be great, but it tastes that much better with it!

Guacamole

Ingredients

  • 1 large avocado
  • ½ lime juiced
  • Generous pinch of salt
  • ⅛ white onion minced
  • 1 green onion minced
  • 1 tomatillo minced
  • ½ jalapeño deseeded and minced
  • 2 tablespoons cilantro minced

Instructions

  • Combine lime juice, green onion, white onion, and salt. Let the mixture sit for 5 minutes
  • Add in rest of ingredients and stir to combine

Entertainer’s Note

To keep the guacamole from forming a brown skin in the fridge, lay over a piece of plastic wrap and gently pat it to cover the surface so there is no air between the wrap and avocado
