Flourless chocolate cake is fudgey, rich and a chocolate lover’s dream. It is somewhere between a brownie and a cake. There’s a fudgey center, but the edges are more cooked and there’s a slightly crackled top layer. This is one of those desserts that seems more impressive than the work required. We love making it for a dinner party or midweek treat. It will certainly scratch the itch for a midweek chocolate craving (we’ve been there).

Why You’ll Love This Flourless Chocolate Cake
If you are a chocolate lover like us, this flourless chocolate cake is for you. It’s rich, deeply chocolatey, and has a texture that is somewhere between a fudgy brownie and a classic chocolate cake.
The center bakes up soft and almost truffle-like, while the edges set into a slightly firmer bite. It’s the kind of dessert that feels special enough for a dinner party, but is actually one of the easiest chocolate cakes to make.

Because there’s no flour, the flavor of the chocolate is very prominent. We like to use a good 70% dark chocolate which creates a balanced cake that’s rich but not overly sweet.
This flourless chocolate cake actually gets better as it rests, which makes it an ideal make-ahead dessert. We find it’s best made the day before.
What Makes Flourless Chocolate Cake Different?
Unlike traditional chocolate cake, this recipe contains no flour or leavening agents like baking soda or baking powder. The structure from the cake comes from eggs and melted chocolate, which creates a dense, fudgey texture. As it bakes, the edges set while the center stays soft and rich.

Ingredients You’ll Need
This recipe uses just a few simple ingredients:
- 70% dark chocolate – the primary flavor of the cake and what provides deep chocolate flavor
- Salted butter – adds richness and we like how the saltiness balances the cake
- Granulated sugar – sweetens and helps create the delicate crackled top
- Vanilla bean paste – what doesn’t vanilla bean make better
- Eggs – give the cake structure and its signature fudgy texture
- Unsweetened cocoa powder – intensifies the chocolate flavor
