There is nothing better than homemade caesar salad dressing. There is something about the homemade version that the bottled version can’t match. The fresh lemon, garlic and parmesan make the perfect caesar. Plus, it is easier to throw together than you think. We make the whole thing in a food processor and it takes just a few minutes and ingredients for the perfect caesar dressing.
Components of the Caesar Dressing:
- Garlic

- Fresh squeezed lemon juice

- Olive oil
- Grated Parmesan

Can I use bottled lemon juice?
We find that fresh squeezed lemon juice has the best flavor. The bottled ones do not give the dressing quite the same freshness.
Can you use pre-grated parmesan cheese?
We recommend buying parmesan wedges and then “grating” by adding a block of parmesan into the food processor and then pulsing until it forms little pieces (about a quarter size of a pea). You can do this right before make the dressing. Trust us, it just tastes better than the pre-grated version.
Can I use jarred or dried garlic?
We find that fresh garlic works best here. Jarred or dried garlic will not provide the same flavor.
How long can I store the caesar dressing in the fridge?
The caesar dressing can be stored in the fridge for up to 1 week in an airtight container. Make sure to give it a good stir before using it as the ingredients may separate slightly over time.
Caesar Dressing
Ingredients
- 1 clove garlic
- 3 egg yolks
- 1 teaspoon anchovy paste optional
- ⅓ cup fresh squeezed lemon juice
- ¼ teaspoon salt
- 1 teaspoon freshly cracked pepper
- 1 cup olive oil
- 2 oz grated parmesan
Instructions
- Add 2 oz of parmesan (and more for topping your salad later if needed) into the base of the food processor fitted with the blade attachment. Pulse until the parmesan forms a coarse powder. Remove the cheese and set aside
- Add the garlic, anchovy paste, egg yolks, lemon juice, salt, and pepper into the base of a food processor. Blend for 30 seconds until well combined and the garlic pulse is finely chopped
- With the motor running, slow steam in the olive oil through the top. Continue to stream it into the food processor in a very slow drip until all the oil is incorporated. If the oil is added too quickly, the dressing will not be as creamy so make sure this is a thin, steady steam
- After adding in the oil, turn off the food processor, remove the top and add in the cheese. Pulse until just combined
- Store in the fridge for up to 1 week
